Instructions
1. Season the beef with five-spice powder. 2. In a large pot, add beef broth and water. Bring to a simmer. 3. Add minced garlic, sliced ginger, and sliced onion to the pot. 4. Stir in soy sauce, chili bean paste, cooking wine, dried chili peppers, and star anise. 5. Add the seasoned beef and sichuan peppercorns to the broth. Let it simmer until the beef is tender and the flavors have melded. 6. Add bok choy to the pot and cook until just wilted. 7. In a separate pot, cook the noodles according to package directions. 8. To assemble, place the cooked noodles in a large bowl. 9. Ladle the beef soup over the noodles. 10. Garnish with fresh cilantro and chopped scallions before serving.
